What I Eat in a Day (Just a Random Weekday!)

I’ve gotten requests to post a “what I eat in a day” so this is just a random weekday of eating. Some things to note:

  1. I eat over 2,000 calories a day. This fuels me throughout my day, running, and life. I eat to keep myself healthy, energized, happy, and also injury free.
  2. I eat lots of carbs – because shouldn’t everyone?! Yum!

Ok, I think that’s it 🙂 PS: these photos were taken a work day, so quick snaps before eating and getting to work!

Pre Breakfast:

As soon as I wake up, I drink a glass of cold water (not pictured) and pour myself some black coffee (I don’t put anything in my coffee). Gotta wake up and get fueled for the day!

Breakfast:

More coffee and more water 😉 Typically during the work week, I have oatmeal with chia seeds and a little Fiber One with eggs/egg whites on the side and some blueberries! Sadly, we were all out of Everything But the Bagel seasoning.

Lunch:

On my quick lunch break! I always include some kind of veggies with lunch, and carrots and red peppers are very easy to prep. (I usually dip them in Sabra Supremely Spicy Hummus but we’re all out!). On this day, I also had a chocolate chip banana muffin, a strawberry Two Good yogurt, rotisserie chicken on pita bread, and some of my homemade Imposter Cookie Dough on a rice cake.

Belly is full and back to work I go!

Pre Workout:

Home for the day! I love having a banana with peanut butter before my workout. It’s full of carbs and gives me energy to go, go, go!

Post Workout:

Alright…chocolate milk is the BEST thing after a workout (I mean, I hear it’s actually really good to have after a run but I’m referring to the taste here.) I also had some smoked almonds, turkey, and cheese.

Dinner:

My plate is officially overflowing! It was a busy work day so I reheated some Spicy Turkey Bake we had in the freezer. I also finished up some sweet potato we had (hidden to the left) with some ketchup, broccoli, and pasta with chicken and marinara sauce.

Dessert:

You can never go wrong with some candy corn (where are my candy corn lovers?!). Other desserts I like are either a chocolate or caramel rice cake with some flavored Bowmar nut butter on it, and then I top it with chocolate chips or candy corn. On Fridays and Saturdays, I make my dessert more extravagant and have ice cream!

This isn’t what I eat every single day – I like to switch it up and try new things. What’s something you love or like to eat everyday?
